It seems like more and more lately we keep hearing about superfoods. The question is, do you know what a superfood is and what qualifies it as a superfood?

What Are Superfoods?

Superfoods are a category of foods found in nature; they are superior sources of essential, super-power nutrients, nutrients we can’t make ourselves.  They are the most powerful foods on the planet, and are powerhouses for the transformation to a slender, healthier you.  If you are what you eat, why not be super?

Where Can I Find Them?

Superfoods can be found everywhere. You are likely using many of them already everyday. Not all superfoods come from exotic places like Costa Rica and Thailand – but many are right here in North America and can be found at your local health food store, grocery store or farmer’s market.

Everyday foods such as kale, quinoa, sweet potatoes, blueberries, and raw honey are amazing superfoods to start with.  If you want to get exotic –  include superfoods such as nori seaweed, cacao, goji berries, maca, Maqui, and mesquite as well.

Superfoods Also Include:

  • Raw foods(food not heated above 48 degrees Celsius or 120 degrees Fahrenheit),
  • High enzyme foods - (foods that easily break themselves down are easier on our digestive system, such as mangoes, pineapple, papaya and avocados)
  • Organic foods - (foods grown without pesticides, herbicides, and chemicals)
  • Fresh, local foods (visit local farmers markets and taste the difference that local foods make!)

When Choosing Your Superfoods:

Look for foods with a variety of colour, texture, flavour and shapes.  This makes your meals and snacks exciting!  No one wants a boring meal that doesn’t taste good.

Focus on high nutrient-dense foods over low calories.  Calories don’t determine how many vitamins, minerals, enzymes or overall nutrients are in a food item.  Superfoods have concentrated nutrients (protein, carbohydrates and fats) and provide so much nutrition in every bite. It’s also important to get away from focusing on calories all the time. It can become obsessive and you may loose sight of actually consuming good quality food!

They make you happy! They help you to actually lose weight because you will be eating foods that satisfy and satiate, rather than make you crave other foods!  Your cells become saturated with nutrition. Plus:

What foods get your body moving?

It’s that time of year again when seeing the sun come out from behind the clouds makes me want to be outside. I want to play, and I want to get fit!

The question that’s always asked of me though, especially because I’m active and vegan, is how I have enough energy to get through my days and my workouts? Well, I simply say that I have the perfect solution: plant-based foods. Not only are they filled with the most highly nutritious and bio-available vitamins and minerals, but they taste great too.

Plant based foods provide all of the macronutrients (proteins, carbohydrates, and fats) essential in maintaining optimal energy. Since working out causes physical stress, it creates acidity in the body. In order to regain a state of alkalinity, it’s essential to neutralize the body by consuming a plant-based diet filled with neutralizing plant-based foods.

My top sources of energy foods:

  1. Hemp Seeds – contains omega 3 fats and provides long sustaining energy. I love to put them on salads, in smoothies and cereal.
  2. Chia seeds – are loaded with fiber and expand when soaked. Chia makes the most delicious morning porridge. Amazing for before my workouts.
  3. Kale - is a green leafy powerhouse veggie. It is loaded with magnesium and is alkaline forming. Chopped up in a raw salad or steamed on the side of quinoa, kale completes any plate.
  4. Sea vegetables – storing a wide range of trace minerals and nutrients, sea vegetables provide natural sodium to the diet. My favourite sea vegetable is arame or nori – they give me mental clarity and focus.
  5. Tempeh – one of the highest sources of plant protein, is fermented, and is easy to digest. I love marinating tempeh with cider vinegar, lemon juice and coconut oil for a boost to my salads and wraps.
  6. Coconut water and coconut oil – coconut water replenishes the body with much needed electrolytes. So when I am working out, this is my go to beverage. Coconut oil – is loaded with medium chain fats, so they are a quick source of energy and nourishment before and after activity.
  7. Quinoa - contains all of the essential amino acids which are crucial building blocks for protein. Protein builds muscle, so it is important to consume protein especially after a workout.
  8. Goji berries – are a natural source of antioxidants, protein and fiber. They are perfect in a trail mix before a workout or great tossed in a smoothie after a workout.
  9. Cacao – one of nature’s richest sources of magnesium. Gives me a natural boost of energy. Cacao gives me the perfect excuse to have chocolate for breakfast. Tossed in a smoothie or cereal it adds the perfect crunch and kick!
  10. Honey – loaded with enzymes, antibacterial and antimicrobial properties honey is soothing and easy to take down. It is a natural source of sugar and calories so it makes a perfect addition to my pre workout snack and it also gives me that extra boost of energy.

These are the foods that I reach to when I want to get moving, and I highly suggest them to anyone who hasn’t tried them yet. I know my body’s going to use them well and efficiently, and give me that boost of energy without causing me to crash and burn out. They are sustaining, nourishing, and versatile enough that I can consume them daily in multiple ways without ever getting bored of them.

Sexy & Smooth Chocolate Elixirs!

Even though they are thick, smooth and creamy… smoothies don’t always have to be cold, frozen or chilled. They can be warming, nourishing and grounding as well.

The blender is the perfect place to take advantage of all your nutrients and superfoods. Also using herbs in your smoothies is a great way to drink your tea with a little more oomph. Why not make your tea into a meal, and have your meal heal your body! It can help combat infections and keep your body warm, revitalized and charged over the winter months! Start with an herbal tea as the base. Using warming spices or immune enhancing herbs like ashwaganda, reishi, shilajit, echinecea etc. These all help to build the immune system. Or you can make a homemade version of a Chai tea (not black tea based), instead using rooibos and warming chai spices like cloves, cinnamon, cardamom and ginger.

These spices will not only help to warm your body, but they are also good for digestion and help to nourish your organs. Also nothing say’s valentines day like a little chocolate & cinnamon!

Chocolate Chai Mint Smoothie Elixir

2 cups steeped herbal tea: Chaga Chai tea (can be warm or room temp)

1 scoop Sun Warrior powder (chocolate or vanilla)

1 frozen banana

1 tbsp goji berries

1 tbsp cacao powder

1 tbsp coconut nectar

1 tbsp coconut oil/butter

1 tbsp almond butter

1 tbsp ormus super greens

1 tbsp Chia seeds

 

Place all ingredients in a high-powered blender and blend until warm, smooth and creamy. Serve and enjoy!

 

Chaga Chai Tea:

1 tsp chaga

1 tsp rooibos

2 cinnamon sticks

4 cloves

6 cardamom pods

1 tsp dried ginger powder

 

Steep these herbs in a pot filled with water for 10 minutes. Strain through a steeper and cool your red, liquid goodness.

Set aside and use in the base of your smoothie or enjoy as is.

 

Basic Blended Hot Chocolate

1 1/2 cups rice, almond hemp milk

2 tbsp cacao powder

1 tbsp maple syrup, coconut nectar or other sweetener

1 tsp cinnamon

(for extra protein, add in one scoop of Sun Warrior).

 

Place all ingredients in a high-powered blender and blend until warm creamy. Serve and enjoy!

Raw-freshing Mango Delights!

Creamy Mango Delight

 

With summer coming to a close (sorry to say that out loud)- I am getting in my last bits of creativity for summer raw, frozen desserts. When it comes to desserts, it’s all about something refreshing, dense, slightly sweet – and overall delicious. You don’t want to overwhelm your palette with too many things – and no one likes a filmy, sugary residue on their teeth!

The inspiration for this recipe came from tasting a tart similar to these years ago at a raw food demo I attended. I just haven’t been able to get them out or my mind. And if you can believe, it has taken me until yesterday to finally re-create what I could remember of them.

All I remember is the filling being super creamy, moist and tart. The crust being crumbly, chewy and rich. So I gathered my most favourite of raw ingredients and started creating.

Instead of doing a large pie, I opted for mini tarts. That way I could freeze them, and grab them. As oppose to trying to cut a “healthy portion” each time I wanted a slice. This way I could also decorate them individually… and they are just so cute!

They are bite size and easy to eat for a quick snack or dessert. Take them to a friends for a potluck or stash them in your freezer and keep them for yourself :)

Creamy Mango Delight

Crust:

2 cups dried coconut

1/2 cup raw cashews

3 tablespoons coconut nectar

1 tablespoon fresh lemon zest

1/8 teaspoon sea salt

2 tablespoons dried coconut

2 tablespoons dried goji berries and/or cacao nibs

Filling:

2 cups dried mango, soaked for 3 hours in 2 cups water with half a lemon wedge

1/4 cup pitted dates

1/4 cup raw macadamia nuts

1 tablespoon coconut butter or coconut manna

1 tablespoon lemon juice

1. In food processor – add the coconut, lemon zest, coconut nectar and salt until mixture forms a ball and is fully blended.

2. Press into a tart pan or mini tart pan and set aside.

3. In a high speed blender or Vita Mix - blend the soaked mango (set the soaking water aside) dates, macadamia nuts, coconut butter and lemon juice.

4. Blend until creamy, may need to fold with a rubber spatula for optimum consistency. Pour mixture into pie tart crusts and garnish with coconut and goji berries!

5. Place in fridge or freezer for a few hours so that it sets.

Due North…on Super Foods

I may not have fully expressed the full realm of what is taking place at the end of next week. I have known about it for nearly two years, you’ve probably heard bits and pieces but I have yet to give you the full story or my version of it!

My fiance Ryan,  is headed to the North Pole in April. That’s right you heard me, the North Pole! I know this may sound a little extreme but if you know Ryan (or get to know him) you would very quickly learn that this is a boy who likes to do things that the average person just wouldn’t do. I mean, how many people would willingly choose to trek to the North Pole? I am not going to spend my time here explaining why he is doing this or what his race entails for those details you can look in his website Ryans Race.

What I will say though is this. He is doing this race for his own personal feat, but with a greater plan. When he gets back he not only wants to integrate this into his line of business, events and motivational speaking. But he also is passionate about raising awareness around childhood obesity and health. This is the ultimate goal!

There are a number of reasons why this race is so extreme. Its not only about the fact that he is going to be  -40 degrees whether or that he will encounter a polar bear or fall through ice, I mean there are much worse things – like eating dehydrated food-like substances out of a package and snacking on broken pieces of refined candy and milk chocolate all day long. Yup, that’s right. That is what the other racers (all of 8 of them)  will be consuming day in and out during the race. Ideally he needs foods that will dissolve easily in his mouth as he is going to be in below freezing temperatures. This is the rational for providing refined “junk” if you will, as the main source of energy as part of the race. But this was no roadblock for me as I was determined to find the equivalent amount of nutrients for Ryan using wholesome alternatives!

There was no way that the man I am about to marry is going to sabotage his body (after building it up for 5 years) for one month on junk food. So we made sure to get in touch with the race organizer and confirm that Ryan can provide his own food and fuel for the days of the race. Luckily this wish was granted – not that I would have it any other way!

My full wish would actually be that everyone on this race would be on these very same foods. If only there was full comprehension of the immense super powers of the foods Ryan will be consuming, I am positive the others would want to be on the same stuff. As Ryan will be building up and nourishing his body with living, pure, wholesome plant based energy. This will not only provide what he needs while he treks through this race, but will also ensure that he will recover and adapt sufficiently to the extreme measures he is about to endure. I can’t say the same thing for all the  dehydrated, over-salted, highly sugared processed food that is actually supplied on this race.

Ryan is going to be burning approximately 12,000-14,000 calories, and this needs to be replaced by quick, easy to burn high energy foods and needs to consume approximately 10,000-12,000 per day to replenish his body. With these sources of incredible slow burning carbohydrates, essential fats and plant protein sources, Ryan will be nourishing his cells, organs and brain all at the same time.

It’s too bad there is no prize for winning this race. It is just about accomplishing getting to the North Pole, which as you can imagine is a feat in itself. But as the winner of this race, (which I know Ryan is striving for and won’t accept anything less), I will be thrilled to say that he did it on the world’s best superfoods!

As some of you may know, I have been living abroad discovering the world’s natural health products and superfoods.  For three years I traveled back and forth between Canada and the beautiful exotic country of Venezuela, finally moving there permanently this past September.  I loved discovering all the local superfoods, those that we up in Canada (no we don’t live in igloos), cherish so much!

I could go on forever about all the wonderful and nourishing treats from nature that Venezuela has to offer!  The many landscapes of this tropical warm country have everything including wild aloe vera plants, coconut, cacti, noni, papaya, sea weed, pineapple, pumalaca, cacao and much more!

Chocoholics…this is for you…so listen up!  The one superfood I want to talk to you about is real chocolate.  I’m excited to tell you that real RAW chocolate is indeed a superfood!  You can turn cravings for cooked, processed chocolate into super-nutrition instead. All chocolate is made from the cacao fruit.  Inside the cacao fruit are beans.  These cacao beans are used to make RAW, organic chocolate!

Cacao Fruit

I was fortunate to have seen the process in which cacao is produced.  I visited my friend’s organic cacao farm in the lush rainforest of Los Altos, Venezuela. How amazing is it that they produce their OWN chocolate!  Yummy!  Venezuelan cacao is the finest, rarest, most expensive cacao in the world.  The beans have a unique flavor.  In case you are wondering, cacao tastes similar to, yet BETTER than, Baker’s Unsweetened Chocolate. A natural sweetener can often be used in conjunction with your raw treat ingredients, such as raw honey, stevia, coconut sugar, agave nectar, banana or pure maple syrup.

The cacao beans are grown in the mountains using no pesticides, fertilizers or chemicals of any type.  The trees in which the cacao fruit grows are irrigated by the fresh water that runs down from the clouds in the forest-topped mountains. Once the beans have been harvested they are sun dried right on the small property in the mountains, and hand packaged for local consumption.

When looking for cacao or raw chocolate in health food stores, it’s very important to look for fair trade and organic varieties that support small, indigenous farmers in Central/South America and the West Indies.

So why is it ok to LOVE raw chocolate?  Well, first off, it tastes divine.  And second, it’s good for you.  The cacao bean contains a wide array of amazing nutritional properties.  It is filled with antioxidants and alkalizing minerals, including high levels of magnesium and sulfur. Back in high school, I used to crave EVERYTHING chocolate uncontrollably…mostly processed chocolate (aka Reese’s Peanut Butter Cups or Nutella).  Processed chocolate is NOT the same as good quality raw chocolate!  When cacao is cooked, most of its nutritional properties are completely destroyed.  Chocolate cravings often indicate a magnesium deficiency because your body is craving the magnesium from the cacao.  Processed chocolate never satisfies your body because it has close to NO minerals and it’s filled with refined sugar, which is acidifying in the blood and actually leaches out minerals from our bones and tissues!  Since I started consuming quality raw cacao, I haven’t yet had another “processed” chocolate craving.  Really…it’s been over two years now!

A study by the Center for Health and Nutrition

Elaborates the following findings: “Analysis of the fruit powders demonstrated that the antioxidant capacity of cocoa powder was significantly greater than blueberry, cranberry and pomegranate powder on a per gram basis. The total polyphenol content of cocoa powder appeared to be greater than acai, blueberry and cranberry powder; however these differences did not reach statistical significance. The total flavanol content of cocoa powder was significantly greater than all of the other fruit powders tested.”

Not only is it high in antioxidants and minerals, cacao may also increase your focus and alertness, making it a good healthy alternative to your morning coffee.  I love adding cacao to my breakfast shake.  Who would have thought chocolate would be “healthy” option for breaky!

Cacao also contains plenty of nutrients that keep you happy J Chocolate is often associated to love and seduction. This is all because cacao contains phenylethylamine. Also, your brain produces a neurotransmitter called Anandamide when you’re feeling GREAT. Eating cacao makes this neurotransmitter stick around longer thus increasing your happiness.  Raw cacao beans, nibs or powder can be used in a variety of ways.  I like adding it in baked goods, oatmeal, shakes. and to make a cup of hot chocolate to warm up on a chilly day.

Try out my favorite morning shake that uses cacao as your wake-me-up “stimulant” instead of coffee.  It’ll start you out on a positive vibe and leave you full of happy energy!

Cacao-Banana Dream Shake  (aka the “Happy Shake”)

1 scoop sprouted vegan protein (or 100% natural whey protein isolate)

2 tbsp of ground flaxseed

1 tsp raw cacao powder [makes you happy]

½ medium banana [increases serotonin to give you a natural “high”]

½ cup organic almond milk (or hemp milk)

¼ tsp natural vanilla extract (optional)

 

Blend all ingredients while adding water and ice as needed.  Serve fresh.  ENJOY!

The Right Raw Chocolate

Delicious Goji Chocolate Bar!

Those of you who read my blog regularly know that I am a “chocoholic” like many others. I am always sourcing and looking for the latest and tastiest ways to create chocolate recipes at home and every once in a while I come across a great product that inspires me (and makes a great addition to my purse or travel bag!)

I discovered righteously raw about a year ago, when  friend of mine told me I had to try this raw chocolate bar that wasn’t like anything else. Not only are the ingredients incredibly pure, but each variety is loaded with a layer of superfoods – which makes the bar extra chewy and extra delicious.

It’s not easy to find a raw chocolate that tastes as good as this one. Plus it is nut free and has the added benefit of all my favourite superfoods from goji berries, acai, lacuma, maca and cacao. This would make anyone very happy and of course very healthy!

A Veggie-Q for my QT!

Being a vegetarian does not mean that you can’t enjoy summer parties, potlucks and BBQ’s. You just need to get a little creative and have fun with it. So this past weekend was my fiances birthday. He  wanted a low key night, a dinner in with some family and close friends. Of course what this means, is that I am making dinner! Which is no problem of course, I  love providing delicious goodies, especially things that everyone can enjoy! Not everyone who was coming was a vegetarian, but that didn’t matter, my mom took care of some chicken for the group, and I handled the rest!

Make sure that when you are in this situation, you find out what all your hunny’s favourites are – and go from there (hopefully you know them already!). Luckily everything that Ryan loves, are things that everyone could enjoy – and they also make great compliments to the main meal.

So we started off with some yummy appetizers,  There was a  home made guacamole, parsley-hummus, along with an organic store bought salsa – lots of spelt flatbread and organic corn chips for dipping. Then we had a selection of side dishes – Ryan’s favourites include (quinoa tabule,  pasta salad, yam fries and “caesar” salad) and the main meal for us was Organic Sunshine Burgers (which  are truly scrumptious) simple ingredients and are so easy to enjoy at a summer-Q with or without a bun!

Of course the night was topped of with Ryan’s all time favourite – a tender Chocolate Cake – made from spelt flour (all vegan and sweetened with maple syrup) crowned by an almond butter, cocoa icing – this is his number one request on a annual (or more like weekly) basis! So I paired this with coconut-mint (from my garden) cacao ice cream (the colour green in the ice cream is actually from Ormus Super Greens). No one even questioned why the ice cream was so bright green! I may even post this recipe too since it was soooo fantastic!

So there you have it, an amazing, wholesome meal that everyone can enjoy – lots of variety, flavour and texture. You want to keep your crowd happy, but most importantly you want to make your CUTIE smile on his birthday!

Vegan – Mint Cacao Coconut Ice Cream

Mint-Cacao Coconut Ice Cream

2 cans of organic coconut milk

1/4 cup vanilla rice milk

1/4 cup maple syrup

2 tbsp fresh stevia leaves (only the fresh leaves or else leave it out!)

1/2 cup fresh mint leaves (or you can use a few drops of peppermint oil)

1-2 tbsp Ormus Super Greens (it has a minty flavour)

1/4 cup cacao nibs

Place all the ingredients except the cacao nibs in a blender and blend until smooth, creamy, and green.

If you have an ice cream maker, pour the mixture in and begin to churn, adding the cacao nibs after a few minutes.

If you don’t have an ice cream maker, freeze the mixture in a large bowl for about an hour, then remove and stir in cacao (so they don’t all sink to the bottom).

Then continue to freeze for another hour or two (depending on the consistency you like).

RAW WALDORF SALAD

raw salad

Ingredients:

1-4 cups of arugula or mixed greens

¼ cup peeled jicama

3 stalks celery diced or cucumber chunks

1 apple, diced – I like granny smiths

1 cup sunflower sprouts

½ cup walnuts, chopped

1 tbsp hemp seeds

1 tbsp goji berries

1/4 avocado, sliced

Waldorf Dressing – makes over 1 cup

¼ cup hemp oil

2 tbsp raw tahini

2 tbsp lemon juice

2 tablespoon apple cider vinegar

1 tablespoon raw honey

2 tablespoon tamari

2 tbsp – ¼ cup freshly squeezed orange juice

Filtered water (add slowly only if needed without hemp oil)

  1. Combine the dressing ingredients in a blender and blend until smooth.
  2. Pour over salad ingredients and toss until well coated.
